From the winery: Rosé is a blush wine made from barbera, zinfandel and a little cabernet. The red grapes are brought into the winery towards the end of the summer and after crushing allowed to sit on their skins for about 8 hours before pressing, resulting in a light pink juice. This pink juice was cold fermented for three weeks in order to preserve as much of the character of the wine as possible. Fermentation was stopped early by freezing so that some residual sugar would remain. The wine is semi-dry with hints of rose petals, strawberries and fresh plums on the nose. The palate is well balanced, medium bodied and slightly sweet.
Pairing: Dalton Rosé was made with the Israeli climate in mind and is particularly suitable for Mediterranean climate and cuisine. Rosé makes a particularly good aperitif and is a good accompaniment to a picnic in the park with friends, or fish and seafood dishes.
